A note from the chef

Often times, when people have an opportunity to try my food, they discover unforgettable, deep, bold flavors. Normally they ask, “Where did you learn to cook with such lovely bold flavors and compassion?” The answer is simple. It began with my grandmother who then passed it on to my beautiful mother. My cooking began at a young age. I remember when I was 10 years old, I used to help my mother in the kitchen cooking delicious food. During the cooking, she mixed all the ingredients and her famous spices to create a perfect aroma. Certainly, my neighbors smelt the aroma and invited themselves over to our house. They enjoyed eating any meal that was cooked and continued finishing the food day after day till it all disappeared. It left a lasting impression on me. More neighbors stopped by anytime we cooked. I found myself meeting new neighbors that I had never met before. As time went on, my mother began to pay me in candy to “help” stir the jollof stew, since it needed to be stirred frequently. Meanwhile, my confidence grew stronger and I wanted to cook more. Sometimes she sent me to the local market, similar to farmers markets, to shop for the best ingredients and quality produce. She taught me how to look for good ingredients and how to use them correctly. Overall, she trained me well to be the best chef. Because of her, I became the excellent cook I am today. I hope my journey of cooking will inspire you as well.
